Author of two Louisiana history books: "Louisianians All," a collection of biographies of people from the state from all ethnic origins and religious backgrounds who carved a positive impact on Louisiana; "Flags of Louisiana," covering the history behind, and symbolism of, the ten flags that flew over Louisiana. Some city and Parish flags also included along with explanation of heraldry. Co-edited and compiled three editions of the "Louisiana Almanac," a compendium of facts pertaining to the state that is well over six hundred pages long and includes history, demographics, weather, education, health and hospitals, superlatives and astronomical data, to name a few.

In 2002, wrote an article for the New Orleans Times-Picayune that covered the rare frescoes found in the New Orleans Union Passenger Terminal that were painted by Conrad Albrizio who used the same techniques as Michelangelo when he painted the Sistine Chapel. The frescoes were falling into serious neglect and decay. After Frois' article, a grass roots effort mobilized amid historians, preservationists and artists to preserve and restore the historic artwork. The preservation was completed in August 2005 just before Hurricane Katrina.

The Around Louisiana section written, edited and compiled by Frois, has been named Readers' Favorite in surveys performed by Renaissance Publishing. Frois also edits grants, articles, book chapters and manuscripts submitted by published faculty members of the Tulane University Health Sciences Center Department of Pathology to national and international medical journals, publications, and government agencies.
